Not very different in both IAS and IPS syllabus. In both exams you have to face prelims exams and Mains exam.
In both exams There are two types of written examination in UPSC.
UPSC Prelim exam and UPSC Mains exam. You will appear in UPSC Prelim exam first in which Objective type Questions are asked from General English, General Studies etc.
For UPSC Mains you have to choose Subjects. There are total 51 Optional Subjects in which 23 are from main subjects and 28 Language Subjects like Hindi, English, Bengali etc.

IFS until and unless you are very passionate about Civil services.

No there is no difference between these two in the sense of examination for examination it is same that means in terms of syllabus and interview etc..,
As you know IAS/IPS are the services for which a common entrance examination called civil services examination will be conducted by UPSC
everything till the end of the examination pattern will be same for both IAS/IPS aspirants.
at the last stage when you give preferences of services then the IAS aspirant must tick on IAS and IPS aspirant must prefer IPS as their first option and interest.
In interview the candidates will be questioned why do they have interest on their preferred service.
they have to be ready to answer that with a genuine answer.
