selection of optional subject is totally based on the knowledge of subject , your interest in the subject and availability of study material related to subjects.
choosing your core subjects as optional subjects is always helpful because you have studied these subjects in your academic carrier and you have knowledge of these subjects.
But as you said you are not interested in choosing your core subjects as optional subjects then you can choose Indian history and geography as optional subjects. because these subjects are considered scoring and easy to crack.
Most of students choose these subjects as optional subjects because these subjects are easy to learn and understand.

Since you are an engineer you must be interested with your 11th & 12th class subjects.
- You can choose Mathematics/Chemistry/Physics as your optional subjects since you are familiar with it.
- Even NCERT books of the above subjects will help you in UPSC exam.
- You can also choose other subjects of your own choice.
- Choice of subjects should be the one with which you are comfortable.

There are a lot of popular optionals such as geography, history, public administration, political science, sociology, psychology. but it doesn't mean that if you choose other optionals you cannot score high. there are many successful candiates who choose optionals such as veterinary science, zoology, botany, any of the languages etc.These optionals which i mentioned are more popular among the candidates and nearly one third of the successful candidates have one of the subjects as optionals. just choosing these optionals does not guarantee you a high score. you should put in lot of hard work because competition is very high in these optionals. Different individuals have different interest and learning style. So have a detailed look at all the available optionals(including the syllabus). jot down the ones you are interested or willing to learn or any of your graduate subjects. finally choose the subject which u think suits you. also while deciding take into account the difficult level of the subjects, the expert guidance available for the subjects and also the availability of books and other materials such as previous year question papers. you can ask suggestions, but let the decision be yours. there is no optional as such which is scoring or non scoring and there is no optional which is safe
upsc is maintaining at most parity between the optionals.
so depending upon your interest in subject,availability of study material and guidance you may take up the optionals.
the most popular optional subjects are pub ad,history,geography,political science,philosophy,psychlogy,literature etc..
