You will have to fill the optional subjects while filling your application form.
You can fill the subjects as an optional in which you are most interested.
In the mains exam of IAS the questions will be asked from your optional subjects so you must have to prepare for the subject you choose for the IAS.

i have seen lots of candidates are confused regarding the selection of optional subject. we are here to solve your problem. here you have not told about your academic qualification or background of your academics and about your interest. So its hard to advice you any particular subject as your optional subject. So i will give you some suggestion which you can follow while selecting your optional subject.
As you now from the new pattern you have to select only one subject as your optional subject instead of two for Mains exam.
So i will advice you to select the subject which you have knowledge means you choose the subjects related to your core subjects or you have studied the subject. because your knowledge in the subject help you to prepare for the exam. Also while selecting you must concentrate that which subjects you interests you more because without interest you can't do well preparation for the exam. if you select any subject then leave all negative thinking that subject is tough, horrible etc. etc.. . you need to fully determined, work hard study from heart and prepare well success is in-front of you.

Agriculture,Animal Husbandry & Veterinary Science,Anthropology,Botany,Chemistry,Civil Engineering,Commerce and Accountancy,Economics,Electrical
Engineering,Geography,Geology,History,Law,Manageme nt,Mathematics,Mechanical Engineering,Medical Science,Philosophy,Physics,Political Science and International
Relations,Psychology,Public Administration,Sociology,Statistics,Zoology.
You have to choose those optional subjects in which you have full Interest of Your Field Related subjects.

You may choose any subject of your choice.It would be better to choose a subject which you have already studied during your graduation.If not then you may opt for Geography, History and Public Administration as an optional subject
