If you want to go in civil services field with your current qualification which is M.Sc with Zoology then you can appear for the exam on the basis of your degree or master degree but you should have at least 50% marks in your degree and your age should be between 21-30 years then you are eligible to apply for UPSC exams but UPSC also conduct some other exams where only 12th and only graduation is required which are - CDS and SCRA
If you want to choose Zoology as your subject in the exam then you can choose this subject but you should know that there is a criteria of the exam where you will have to qualify the preliminary exam test which syllabus is same for every aspirant then you are allowed to choose your favorite subject in the mains exam but you would only be allowed to appear for mains exam when you score the minimum qualifying marks in preliminary exam and if you choose Zoology in mains then your syllabus would be as :
