It is better if you choose a subject related to your graduation or 12th subjects.

for the upsc civil services examination the selection of the subjects should be such that it proves to be the best for the examination.upsc has given a list of subjects from which candidates can make their selection according to their interest or the subjects they feel they are comfortable with. apart form that i want to mention that arts subjects like geography,history are very popular for this examination and considered to be highly scoring subjects for the civil services examination.
you have not mentioned your subjects of graduation so i am not sure about my suggestion for you
but for now , my suggestion to you is to take one best subject you like out of your graduation subjects and your second subject can be any one of the arts subjects like history or geography.

Well mine that cant be guesses by us that which subjects are good for you.
You have not mentioned any of subjects of your choice or what was your subject in graduation.
Well, basically try for ,in mine opinion, subjects which may ease your pressure in CSAT examination, so first take a look at this picture, it will explain you on what topic questions are asked in CSAT
You will see that History and Environment are key leaders, so in mine opinion, your two subjects be :
>> Environment
>> History
Next major portion is of current affairs taken in account, so neglect. Then comes Geography and Economics.
Well, Geography is an easy subject and in Interview you will be asked some easy questions regarding it, so in mine opinion, you should take Geography as your 3rd subject, since Economics is troublesome and questions on it are even more troublesome...
SO, in Mine opinion your Subjects should be :

>> Geography

it totally depends upon your preference as to which subject you feel the most scoring.
To know it you need to analysis optional subjects, their syllabus to understand the areas of preparation.
Most of the famous subjects which candidates selects are:

You can choose the subject according to your field of expertise.
If you were very good in your degree level in college than you can select the subject relating to it.
Like suppose if you were good in Accounts in your Graduation than you can opt for "Commerce and Accountancy" subject as one of your optional subjects.

one of the language selected by the aspirant from the 22 languages included in the 8th schedule of the constitution.
paper 2: 300 marks
