In stead of bioinformatics i will suggest you to choose either chemistry, physics and mathematics. so you can opt for the same subject in CSAT and score better.
Bio informatics is also good but it has not any relation with UPSC subjects. so your graduation will not add any value to the preparation. you can select zoology, sociology and mathematics also.

If yo want to become IAS officer then you must have only a graduation degree from any discipline from a recognized university.
So there is no specification required in graduate degree for IAS exam.
If you are interested in B.SC then you can do your graduation in it.
It is a great choice.
But there is no restriction about the degree for IAS exam.
For IAS exam you must be in between 21-30 years old.
Relaxation in age is given to the reserved candidates.
