If you want to become an Indian Foreign Service Officer, you have to appear in the UPSC Civil Services Exams.
You can only appear in this exams after completing your Graduation in any stream.
Age to apply for this exams is between 21 and 30 years.

With regards to your query as which stream you should choose in class 11th, it should solely depend on you.
You should choose the stream in which you have interest, the subjects that you are easily able to understand.
Please note that in the UPSC exams in the Mains there are many optional papers and these papers are from science, arts , commerce etc.
You have to choose two optional papers and rest papers are compulsory for all candidates
So choose the stream where you can easily understand the subjects of that stream.

If you know the subjects which you study in class 11th, 12th and Graduation very well , you can easily succeed in this exams.
To clear the UPSC exams you should have deep subject knowledge

to apply for ifs job you have to write the civil services exam which has a prelims and mains and an interview session
to clear the prelims and mains you need to be thorough in economics, current affairs, basic science, hist and geo

Your choice of stream should be based upon your interest rather than anyone else opinion. You should select a stream in which you have interest and you can understand the subjects pretty well without much of complications. The stream will not matter for Foreign services because the eligibility is graduation from any stream. The optional papers in the exams are from all streams and there is no specific preference for any stream. You will succeed in the paper for which you have interest.Your knowledge and grasp in your subjects of choice should be deep and thorough. So go for the stream you are comfortable and proficient in.All the best
