There are many optional subjects in the UPSC for the exams.
It depends upon you that in which subjects are you interested more .
If you have done your graduation from engineering stream then you can give the exams in the engineering subjects.
There are many subjects in the list you can choose any from them these are given below:-

It is very good to take to take engineering subject in graduation.
if you have to completed B.tech from a recognized university specially in the following branch;

---mechanical
---electrical
---electronics
--electronics and communication engineering
after that you can apply IES//IPS/IAS as well as other exam.
engineering subject plays an important role to clear UPSC prelims exam.
General age limit is 21-30 Years,
you must be Indian citizen.

No ,there are many other subjects in which you can score high as compared to engineering subjects.As you know that each branch of engineering covers around 60 different courses so you cannot cover whole subjects in a fix time schedule while on other hand there are some subjects on which you can have good command by self study.Some subjects are-

Geography
Maths
Physics
Chemistry
English
Statics etc.
Political sciences.
Economics.
You can take any subject as your optional as you have good command over the subject as the marks in the subject helps you to score good in the paper..
So you can choose any subject.And if you feel that you know enough in the subject than there is no problem in choosing it...And if you feel it hrd then you can choose any other optional subject..
Examination Pattern for UPSC civil service examination : there would be following papers conducted :
Preliminary examination : Objective type and contains 2 papers and each paper contains 200 marks and qualifying in preliminary examination is compulsory to be eligible for mains examination
Mains Examination : There would be following papers conducted in this examination and only in conventional type pattern means no objective in this section
Paper I - There would be two different section in this paper which are as -
Section I - Essay Writing for 200 marks
Section II - English Language and Comprehension - 100 marks
Paper II, III, IV and V - General Studies I, II, III & IV - 250 Marks for each paper
Paper VI, VII - Selected Optional subject Paper I and II - 250 marks each
