Of-course dear, you can choose one paper from Arts Stream and another from Science Stream. There is no restrictions in this regard.

For example :- one can choose Sociology and Chemistry.

the selection of the combination of the optional subjects for the mains examinations
totally depends on the interest of the aspirant apply for the upsc civil services examination.
aspirants are free to choose any two subjects from the list of subjects allowed by upsc for the MAINS EXAMINATION.

yes there are some combination of subjects that are not allowed by upsc for the mains examination
as they require almost similar preparation for the examination.

the combination such as
